Donna Hay's Apple Slice for Children's Day

Yesterday was Singapore Children's Day. As a working mom, I did not take one day off to celebrate with my daughters. Instead, I baked this Apple Slice early in the morning, as a post-Children's Day gift :).
The recipe is adapted from Donna Hay's website. I Heart Cooking Club is introducing this Australia leading cookbook author as a featured chef . Members are encouraged to cook up her recipes for the next six months.
Both IHCC and Donna Hay are new to me. Since I decided to bake something for my daughters, I browsed Donna Hay's website and opened the category "For Kids". All her recipes look gorgeous with beautiful photographs. My daughters happily chose Apple Slice .
I like simple recipes. Donna Hay's recipes are simply prepared, all the ingredients are easily accessible. This Apple Slice tastes flavorful, absolutely a wonderful dessert to lighten up our Saturday morning! I will definitely cook up her other recipes soon.
APPLE SLICE
- 100g butter
- ½ cup (110g) caster sugar( *I cut down the sugar by half , used 60g )
- 1 egg
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1 tablespoon milk
- icing sugar, to dust (* I did not use)
Apple filling
- 5 apples
- peeled and chopped
- 10g butter
- ½ teaspoon ground cinnamon
Crumble topping
- 1¼ cups (185g) plain (all-purpose) flour
- 1 teaspoon baking powder
- 125g butter
- ¾ cup (165g) caster (superfine) sugar (* I cut down by half, used 80g)
- Preheat oven to 160°C (320ºF). (* I adjusted to 180°C)
- To make the crumble, mix the flour, baking powder, butter and sugar in a bowl until it resembles breadcrumbs. Set aside.
- To make the apple filling, place the apple, butter and cinnamon in a saucepan over low heat and cook for 5 minutes or until softened. Allow to cool.
- Place the butter and sugar in an electric mixer and beat until creamy. Add the egg and beat well. Fold through the flour, baking powder and milk. Spread in a 20cm x 30cm tin lined with non-stick baking paper, top with the apple filling and crumble and bake for 40 minutes until golden.

ReplyDeleteDonna Hay is new to me as well and I agree that her website has many wonderful recipes to choose from. Your apple slice looks delicious, a lovely gift for your children but something I think adults would enjoy also!

It's apple season, gotta try these for sure! Love the photo of the little square bar of it just sitting there waiting for someone to pick it up and eat it...wish it had been me! Nice choice.
