Chicken, Tomato and Mozzarella Pasta Salad

Today is Hari Raya Haji , a festival celebrated by Muslims.  It's also a public holiday in Singapore. I love holiday in the middle of the week, it makes me feel more relaxed than Saturdays cos there is no enrichment class for my daughters.  With alarm clock turned off, everyone just sleeps until awake naturally. Slowly get up, and then starts to think what's for breakfast. On this lazy morning, I chose Chicken, Tomato and Mozzarella Pasta Salad from Donna Hay's breakfast menu.


My family don't have the habit of taking salad in the morning. It simply gives me a "cold" feeling.
However, pasta salad, on the other hand, is just nice to make me feel warm and fresh. Donna Hay's recipe uses pantry-friendly ingredients like onion, garlic, cherry tomatoes, quick and easy to prepare. Warm pasta absorbs more flavour when tossed with mozzarella cheese, olive oil and red wine vinegar.  The dish looks so appetizing!  By the time I served the breakfast, it's about 9:00am. Up and at 'em, we've got a wonderful Tuesday ahead of us!

CHICKEN, TOMATO AND MOZZARELLA PASTA SALAD 
(Recipe from Donna Hay's website. My changes are marked in blue)

Ingredients
- 400g rigatoni (* I used gomiti
- 1.2kg store-bought barbecued chicken, skin off, shredded
- 2 cloves garlic, crushed
- 250g cherry tomatoes, halved
- 1 cup basil leaves, torn (* I used one tablespoon dried basil leaves)      
- 1 small white onion, sliced
- 125g buffalo mozzarella, roughly torn
- 1 tablespoon finely grated lemon rind
- sea salt and cracked black pepper
- ¼ cup (60ml) olive oil
- ¼ cup (60ml) red wine vinegar
- 100g baby rocket leaves for topping

Directions:
  1. Cook pasta in a saucepan of salted boiling water for 10–12 minutes or until al dente. Drain and rinse under cold water.
  2. Place the pasta, chicken, garlic, tomato, basil, onion, mozzarella, lemon rind, salt and pepper in a bowl.
  3. Place oil and vinegar in a bowl and whisk to combine. Spoon over the pasta and toss well to combine. Serves 4.

  1. Pasta salad for breakfast sounds like an extremely fine idea to me! This one looks so pretty, what fun it would be to face that at the beginning of the day.

  2. Oh... I didn't realise that it is public holiday in Singapore yesterday.

    My family and I don't usually eat savoury and pasta for our breakfast too... but we will love to eat this fresh delicious pasta for lunch and picnics :D

  8. I love pasta salad, and this one looks delicious! All the colors are so pretty. I haven't tried having pasta salad for breakfast, but now I think it's a very good idea! :)

  9. Whenever I have leftover pasta I usually do end up eating it the next morning so pasta salad for breakfast works for me! ;-) This one looks fresh and lovely.

  11. I love pasta (one of my favourite food groups - it is a food group in its own right, isn't it?), and I could eat a bowlful of it any time of day. Love it teemed up with chicken, tomatoes & mozzarella - sounds deliciously light and fresh.
