Kids' Favorite Cheddar Cheese Cookies

Yesterday, my daughter and I were shopping at a supermarket. Before checked out, as usual, I went to the magazine corner to see anything new. My girl passed me a magazine,  "Mom, can I buy it?"


I took a look at the cover, it's TEENAGER. Other than educational magazines subscribed at school, this was the first magazine she has ever asked me to buy outside the school.  There is a sweet poster inside the magazine. On one side of the poster, it's Taylor Swift, and on the other side, it's Lee Kwang Soo (in case you don't know him, he is a cast member of South Korea TV series Running Man). She brought her first entertainment magazine home happily, and read it the whole afternoon...

My girl is a preteen now.  How time flies! Looking at her baby photo on my table,  it seems like it was taken only yesterday.  Words can't really express how much happiness, pleasure and memories my girls have brought into my life. All I can say is, I grow up together with my kids. And in the process, I enjoy the every moment of being a parent.


Baking is one of the skills I developed over the years, partially for my own interest, partially for my kids. They are the ones who inspire me most of the time, especially when I  run out of baking ideas.  This Cheddar cheese cookies is my girls' second favourite cookies, just next to Famous Amos cookies.

I cut out these cookies with animal cookie cutters, and they turned out so cute.  Dancing bears and rhinoceros.  Lovely cookies for my lovely daughters, on a lovely Sunday!



CHEDDAR CHEESE COOKIES


INGREDIENTS

- 175g salted butter (cold)
- 250g plain flour
- 175g Cheddar cheese - grated
- 2 egg yolks

DIRECTIONS
  1. Add flour in a mixing bowl.
  2. Remove butter from refrigerator and cut into small cubes.
  3. Rub in the butter with your fingertips until the mixture resembles bread crumbs.
  4. Add egg yolks and grated cheese. Mix with hands until a dough is formed.
  5. Roll out the dough until it's about 5mm in thickness. Cut out the cookies with a cookie cutter.
  6. Place about 2cm apart on a lined baking tray. Brush with egg wash.
  7. Bake in preheated oven at 200 DegC for 18-20 minutes, or till golden in color.

  3. Hi there. I have came across your recipe while searching for cheese cookies. I'm wondering the cookies can be stored in airtight container at room temperature or in fridge? Need to consume within how many days?

  4. Hi, I store them at room temperature in a airtight container. I believe consume within a week should be fine (mine always gone in 3 days, though).
